This banana bread is one of the few things I have perfected over the last 5 years. Anytime I give it to someone they love it, and want the recipe. I literally use to bribe my sister in law to babysit my kids with it. I have tried a few different versions, and tweaked them. If I really want to get freaky with it--I add chocolate chips!!! This is definitely not a healthy recipe so if your wanting that go ahead and move right along.
- 3/4 cup butter
- 3 cups white sugar
- 3 eggs
- 5 ripe bananas (mushy ripe)
- 16 oz sour cream
- 3 teaspoons vanilla
- 2-3 teaspoons cinnamon
- big pinch of salt
- 3 teaspoons bakingsoda
- 4 1/2 cups flour
- 1 cup Chocolate chips optional
Preheat oven to 325 degrees. Grease loaf pans. (I usually make 1 large loaf and 4 mini loaves with these measurements) Sprinkle a little sugar in the pan so it will bake on top.
In mixing bowl cream the butter and sugar. Mix in eggs, sour cream , bananas, cinnamon, vanilla, salt, baking soda, and lastly flour. If your adding chocolate chips or nuts do this now as well. Pour the mixture in to pans. My large loaf usually bakes for 1 hour and 15 minutes. The mini loaf pans take about 45-60 minutes. Test til toothpick comes out with no dough on it.
